Frozen Chicken Breasts

November 12, 2008 3:02 PM Filed Under: RECIPES Q & A

I took four chicken breasts out of the freezer this morning. What should I make for dinner?

Well I suggest you don't put them in a microwave-safe bowl, cover them with bottled salad dressing and nuke them like someone in my family has been known to do. I'll add...they were still frozen when she cooked those poor little chickens. Instead, defost the chicken then dice, season and saute in olive oil. Toss with cooked, buttered pasta and steamed broccoli. Mix in some parmesean. Have a nice dinner. --Hilary

tip o’ the week: Super Easy Mac 'n Cheese

Last year Hilary bought Alyssa's daughter a cookbook and Annabelle has spent the better part of the year perfecting the cookbook's macaroni and cheese recipe. Here's her version--the first one the children like that doesn't come out of a box and doesn't involve some sort of flourescent orange substance. The topping is our own special addition...but be forewarned: you won't be able to stop at one bite!
